A fantastic farm, run along biodynamic lines, on the Bridgehead Estate at littlebredy. This farm supplies The Gavroche, The Ledbury and Combe House Hotel in Devon ‘most romantic hotel in Britain!’ so we are in very good company.

 

Heritage Prime Hogget

Chef James Brown butchers the carcase himself “the meat is generally delivered at about 4 in the morning” he says, “so I take delivery, and sometimes I’m just so excited by the quality and potential of the meat, that I don’t go back to bed, but start work straight away”.

As regulars know, we are committed to sustainability, so every part of the animal is used.  We are currently selling Heritage Prime beef and, at the end of November we will be taking delivery of a whole hogget.  This is not a small gnarly fellow from the pen of Tolkien, but a lamb which is a year old.  This means it is larger and with much more flavour than the usual lamb you are used to.  James is making the traditional accompaniments of a green sauce with parsley and capers, and there will also be chutney of autumn fruits.

James has designed the following winter menu which will show the meat at its best.  There is going to be lots of it, so why not book a table with some friends and get stuck in.  We have recently refurbished our upstairs room, so, if there are too many of you to be seated downstairs, we can take up to 40 in the private dining space. Do come and try this, there really is no better way to spend a grey wet cold evening:

Sustainable Restaurant Association - 3 StarsWe have just gained a triple gold star rating from the Sustainable Restaurant Association.

The Three Stags underwent a survey during February 2012.  The survey dealt with three key areas. Sourcing local, seasonal food, focusing on animal welfare.  Engagement with the community and the environment. Including recycling and waste and energy management.

70% is needed to gain the top rating and we scored overall score of 72.
