A fantastic farm, run along biodynamic lines, on the Bridgehead Estate at littlebredy. This farm supplies The Gavroche, The Ledbury and Combe House Hotel in Devon ‘most romantic hotel in Britain!’ so we are in very good company.

We're Covered in Bees

 

Bees are worth over £200 million to the UK economy every year but they are declining by 30% on a year on year basis. A third failed to survive last winter in the US and this subsequently threatens a third of the world’s food production. To combat the situation, The Three Stags has been working hard harbouring our own, very friendly, bees and a small amount of the honey they have produced is now available to our customers.


Our bees have been working hard all summer and we have been careful to leave them plenty of honey to ensure their survival through the winter. Consequently, it has come to our attention that the honey is extremely precious and therefore all monies and all future honey sales are to be donated to the British Heart Foundation to work towards helping others in crisis.


Anyone that has tasted our honey has noticed that the local flowers and horse chestnut trees have given it a very distinct flavour.

The Three Stags continues to strive to be as ethical as possible, working closely with the Sustainable Restaurant Association to remain at the forefront of ethical dining and this really is another issue very close to our hearts. If our bees do well this winter and we are really lucky, we make get another hive from it which is good for the bees, good for the local pollination, good for us and best of all, good for the British Heart Foundation.

Celebrate the London Honey Festival this weekend!

 

Bees have a huge impact on our environment, often one that you don't immediately register.  It is estimated that a third of the world's food is produced as a direct result of pollination by bees, and you only have to glance at the hanging baskets outside The Three Stags on the lampposts to see how much of an impact our hive has had on our surroundings - there have never been so many incredible flowers on show, which can only be attributed to our workers from the roof!

 

Capital Bee, the campaign which supports bee keeping across London, is organising the London Honey Festival this month to celebrate the work of bees and beekeepers across the City, culminating in a free one day event at the Royal Festival Hall this Sunday (21 August).  And in celebration of the Festival, we are delighted to be introducing a selection of honey dishes to our menu from this week.

 

Three new items - Grilled goat's cheese with roasted beets and honey dressing;  Honey-glazed whole chicken with fennel, chilli, red onion & bacon, olives and preserved lemons;  Honey-poached greengages with marscapone and Amaretti biscuits - will be prepared for the Festival using honey supplied by Ethical Eats, the sustainability network, that has been produced by bees across London.  As soon as our own The Three Stags honey is available (at the start of September), we will be using it in a selection of new dishes, so keep an eye on the menu!
